TWO RECIPES WE LOVE BY RELISH CATERING

Alright ladies, we’re back with two more recipes from our friends at Relish Caterers + we think they are the perfect options to serve over Labor Day weekend or hey, even any random night when you need a healthy meal to serve up for the family. CHICKEN PROVENCAL

ingredients

3lb chicken breast, boneless & skinless

1T kosher salt

1t black pepper

1T olive oil

heat a large pan and add olive oil, until warm. place the seasoned chicken and cook on one side until crispy, about 4-5 minutes. turn over and cook an additional 2-3 minutes, and remove from the pan and place on a paper towel.

PROVENCAL SAUCE

1ea garlic clove, minced

1ea anchovy fillet, mashed (optional)

1lb tomatoes, large dice

2c dry white wine

4c chicken or vegetable stock

.5oz basil, washed and picked

1c castlevetrano olives, chopped

in the same pan that you seared off the chicken, sautee the garlic and anchovy for 30-40 seconds until the aroma is released. add the tomatoes and continue to sautee until any juices they release have cooked down, about 5 minutes, add the wine to deglaze the pan and simmer until the wine has nearly cooked away, about 5 minutes. add the chicken stock, and reduce again until the sauce coats back of a spoon. add in chicken, cover, and place pan in the oven for 15-20 minutes at 325 degrees.


SUMMER VEGGIE PROTEIN BOWL

ingredients

1/4c english peas

1/4c seedless cucumber, medium dice

1/4c plum tomato, medium dice

3ea asparagus spears, blanched and chopped with tops left whole

1c quinoa, cooked and cooled

.25oz basil picked and washed

.25oz oregano washed and picked

THE DRESSING

2T lemon juice

1/4c olive oil

2t salt

1t pepper

in a small bowl whisk all ingredients of dressing together until well incorporated and let sit in a medium bowl mix all salad ingredients together until well incorporated and drizzle dressing onto salad. add additional salt of lemon juice if needed. for additional twists add your favorite feta or goat cheese, or a seasonal fruit - orange, strawberry, or peaches.
